Is there anything I should check before recording temperature?

Check the type of signal for temperature measurement. For example, the type of thermocouple (K, R, etc.). Aside from thermocouples, there's also the Pt100Ω RTD, etc. Setting ranges based on this information will give you accurate measurements and recordings.
