I have a DX main unit set up for Ethernet communications with 2 PCs. If I'm acquiring data from the DX via Modbus/TCP on 1 PC, can I acquire instantaneous values using applications such as DAQLOGGER at the same time on the other PC?

Yes. The communication port used by Modbus is different than the one that can acquire instantaneous values, so simultaneous communication is possible.
